Chef Dirty Angel's Simple Recipe - Onion Fritters

Yesterday, during lunch, I peeked into the gigantic fridge at home for something to eat and hoped to find some yummy leftovers from the night before but found none.
Rather disappointed.
If you're in the Umong's resident, when you finish all the dishes from the night before, you're most likely to eat instant noodles for lunch the next day cos nobody else is home during the day except me.
I'm home when I'm not required to be at the studio for work.
My life is wonderful.

One look at the instant noodles packet yesterday made me wanna puke a possum. I had them for lunch (noodles, not possum) for 2 days in a row and seriously, man, I've enough of that shit for a while! Even the possum agrees.

Cooking rice was definitely out of the question cos it would take some time to prepare. I scanned thoroughly thru the almost empty fridge and found a bag of all purpose flour hidden at the bottom of the vegetable compartment. I bought a couple of eggs the day before and there was only one useless piece of sausage left. Bummer!

This family need to do some seriously grocery!

Well, it may seem like the end of the world but I managed to figure out a simple recipe with the limited stuff I had. I decided to make myself some fritters. And because there wasn't any anchovies or prawns to mix with the batter. I opted for Indian onion, instead.

You're sure in for a treat if you're a vegetarian!

Preparing this is a piece of cake one can even be blindfolded when mixing all the ingredients.
(I swear I never it tried before but do lemme know if you duct-tape you face when you make yours, okay? I'll give you a high five for your effort! Heck, I'll even top it up with a possum!)


Here's what you need:

1 cup of all-purpose flour (add a tbsp bicarbonate of soda for extra crispiness)
1 egg (lightly beaten)
1 Indian onion (finely chopped)

Seasoning:

1/2 tbsp of chicken stock powder
1/2 tbsp of sugar
1/2 tbsp of pepper
1 tbsp of salt
a cup of water

-oil for deep frying

Sift the flour into a large mixing bowl and add seasoning. Add beaten egg and mix into a batter with water then add the finely chopped onion. Leave the bowl of batter in the fridge for 20-30 minutes.

Fill a quarter of a cooking wok with oil and leave to heat for half a minute then deep fry the batter by spoonful. Deep-fry until your fritters turns golden.

Drain the fritters on absorbent kitchen paper towels to remove oil.


So there we have it,
Onion Fritters for lunch!
Serve with chilli sauce for maximum yumminess!
